Vegetable cutlet Mutton Cutlet Tomato Soup Masala Chai(tea)

Vegetable Cutlet

Ingredients:
1 large Onions chopped fine
1 cup Carrot chopped fine
1/2 cup Cauliflower flowerettes very small
1/4 cup Peas
1 cup boiled & chopped Potatoes
3 Green Chillies
1tsp Red Chilli Powder
1tbsp Ginger and Garlic
1 cup Bread crumbs
1 Egg
Salt to taste
Oil for deep frying
Method:
Heat 3 tbsp of oil and add onions, green chillies, ginger and garlic paste to it and fry for a minute and then add the other vegetables. Cover and cook on medium heat, after about 10 minutes add red chilli powder and salt to taste. Shape into balls and flatten with hands.

Beat the egg well and dip the cutlets in the beaten egg and then the bread crumbs. Deep fry in oil. Remove from oil when golden brown.

Serve hot with sweet & sour chutney, ketchup or mint chutney.

Note: You could also shallow fry the patties on a skillet with little oil instead of deep frying and add besan while adding red chilli powder instead of egg and bread crumbs.

Mutton Cutlet

Ingredients:
1/2kg Mince
2 large Onions chopped fine
1 cup Peas
1 cup boiled & mashed Potatoes
5 Green Chillies
1tsp Red Chilli Powder
2tbsp Ginger and Garlic Paste
2tbsp Garam Masala Powder
1tbsp Cummin Pepper Powder
1 tsp Tumeric powder
1 cup Bread crumbs
1 Egg
Salt to taste
Oil for shallow frying 1 cup cilantro Juice of 1 Lime
Method
Pressure Cook Mince without water, by adding 1 chopped onion, 1tbsp ginger garlic paste and 1 tbsp garam masala powder. Keep aside

Heat 3 tbsp of oil and add 1 onion, green chillies, ginger and garlic paste to it and fry for a minute and then add the mince meat and red chilli powder, garam masala powder, cummin pepper powder and salt. Cover and cook on medium heat, after about 15 minutes or till all water is completely dried up and becomes a lump. Shape into balls and flatten with hands.

Beat the egg well and dip the cutlets in the beaten egg and then the bread crumbs. Shallow fry in oil. Remove when golden brown and squeeze lime juice when hot.

Serve hot garnished with cilantro.

Tomato Soup

Ingredients:
3 tbsp butter
4 cups canned chicken broth
1 tsp freshly ground pepper
1 medium onion chopped
4 tbsp whipped cream
1/3 cup fresh cilantro Chopped fine
6 large ripe tomatoes chopped
6 Green chillies
1 teaspoon salt
1 tablespoon sugar
2 tbsp cornflour
Method:
On a cutting board, dice the onion and tomatoes fine.

Heat butter in a medium-sized pan and sauté the onion until transparent, about 5 minutes. Then add Green chillies slit finely and fry for some time. Add tomatoes fry well then add chicken broth, sugar, salt and pepper and bring to a boil. Lower the beat and simmer for 20 minutes. Lastly add cornflour stirred in a cup of water and add to the soup, stir for some time.

Serve hot garnished with cilantro and whipped cream. Serve with croutons.

Masala Chai(Tea)

Ingredients:
1 cup water
2 seeds Green cardamom
1/2 inch Ginger
2 tsp Tea
1 cup Milk
2 leaves Mint
Method:
Take a small sized pan and add water and bring it to boil add crushed cardamom and ginger to it and also add tea leaves,mint leaves and bring it to boil, Reduce heat and keep on stirring for about 2 minutes.

Add milk and add sugar to taste. Increase heat and bring tea to the boil again, then strain into cups. Serve immediately with biscuits or snacks.
