1 pound ground pork
1 1/2 c. jasmine rice
1 3/4 c. water
4 green onions
1 c. chopped mushrooms
2-4 tblsp soy
1/4 c. lemon juice
Rice: Rinse jasmine rice in cold water for 2 minutes.
Combine rice and water in saucepan, bring to a boil,
stirring once, cover and cook on medium low for 18-20
minutes, or until water is absorbed and rice is al
dente. Put small pat of butter and fluff rice, add
juice of lemon, about 1/4 cup, maybe a little less.
Meanwhile, brown the pork, add finely chopped green
onions and chopped mushrooms, cook for about 5
minutes, add soy sauce to mixture. Cook for amother 2
minutes, stir in rice and cook for 1-2 minutes.
